It's been a crazy few weeks here, exciting times as the group grows, I am seeing so many of you winning with this way of eating. Its great to be able to do this journey with you all. Keep the questions coming, if I don't know the answers I will find them. I love learning and you guys inspire me everyday with your results and victories. I am working on converting our family favorites to Keto along with some of the meals you have requested in group, there will be new recipes posted regularly. Please feel free to post your favorite recipes in the group as well.
Tonight I converted my son's favorite quiche to be Keto friendly. We have not had this meal for ages but I believe this version tastes better than the original. It will be making a regular appearance on the family menu that I share with you all.
INGREDIENTS
20 grams Butter 1 table sp Almond Flour/Meal 2 table sp Psyllium Husks 6 eggs 300ml sour cream 1 table sp herbs I used parsley but you could use chives or dill. 210grams tin salmon 1 cup grated cheese (I used tasty)
Salt and Pepper to taste.
METHOD
1. Mix the Almond meal and psyllium husk together. Rub the softened butter over the dish. Sprinkle the dry mix over the pie dish till covered.

2. Mix the eggs with a whisk add the sour cream and whisk well. Add herbs, drained salmon, Cheese, salt and pepper.

3. Pour mixture into prepared pie dish and bake in a moderate (180° C / 356° F) oven for 30 minutes.

3. Serve and enjoy. I also dish out my husband and daughter's lunches for the next day while serving up. In the morning I just need to add some snacks like nuts, berries, etc. to the lunch boxes.
